A breakfast casserole is essentially a large frittata cooked with eggs and whatever meat, vegetables, and cheese you desire. One of my favourites is this Spinach Mushroom Breakfast Casserole! This vegetarian recipe is satisfying, hearty, and flavorful! The ideal way to begin any day!

Step 1
- Take a frying pan to add oil, onion, and fry till translucent
- Add mushrooms stir for a while season with salt and pepper
- Fry till mushrooms become soft add spinach, cover with a lid and cook for 5 minutes
- Then stir and cook until spinach changes its colour then add red chilli powder and cook
- Take a frying pan add olive oil, butter, garlic, fry till the garlic begins to brown
- Add fresh cream, season with some salt and black pepper
- Add oregano and mix. Add the cooked mushrooms and spinach, red chilli powder
- Cook till the sauce thickens

- Take a frying pan add the boiled mashed potatoes to the pan, milk, Season with salt and black pepper
- Then add oregano after mixing add butter. Cook till the potatoes are thick and creamy
- Take a dish layered the mashed potatoes
- Now evenly layer the mushroom and spinach with cream
- Top with cheese
- Bake in the oven at 180 degrees for 25 minutes
