The word lamington implies layers of beaten gold. A lamington could be a sponge or butter cake plunged in chocolate and covered all over with dried-up coconut. Inside you might discover a layer of cream or perhaps indeed stick. A lamington is an Australian cake made from squares of butter cake or sponge cake coated in an external layer of chocolate sauce and rolled in parched coconut.

The lean mixture is retained into the exterior of the sponge cake and cleared out to set, giving the cake a distinctive texture. A common variety includes a layer of cream or strawberry stick between two lamington halves.

In Victoria (State of Australia) they often include a layer of raspberry or plum stick. They are served with tea in the evening. Lamingtons are so well known in Australia that the cakes are a favorite means of raising money for school bunches, churches, and scouts, and girl guides. These cash-making adventures are called Lamington Drives. Lamingtons can be made with homemade cake, extra cake, or store-bought cake.

Instructions

  1. Step 1

    • First, preheat the oven to 180 degrees Celsius.
    • Grease the 8-inch baking square tin and line it with baking paper. Using a little butter, lightly grease the inside of the paper as well.
Now take a large mixing bowl, sift flour, cornflour, and baking powder twice.
    • Add eggs to a separate mixing bowl and beat them. Add sugar, one tablespoon at a time, once the eggs have thickened and foamed.
Continue beating the eggs for another 5-8 minutes, or until they are thick.

  1. Step 2

    • Meanwhile, in a small microwave-safe bowl, heat the milk and butter for 30 seconds. Allow it to cool.
Gently, fold in the sifted flour mixture in eggs, then pour the butter mixture down the side of the bowl until the flour is just incorporated.
    • Note: If you overmix the eggs, they will lose all of their air.
    • Pour the batter into the cake pan that has been prepared. Bake for 20-23 minutes. Cool it before using it.

  1. Step 3

    • Now, sift the cocoa powder and icing sugar together to produce the chocolate frosting. Mix in the melted butter and milk until the chocolate is completely smooth.
Finally, make 12 squares out of sponge cake.
    • Dip each slice of cake into the chocolate carefully, letting the excess chocolate drip off before covering it in coconut. Allow drying on a cake rack. Repeat the procedure.
    • Serve and enjoy.
