    • Set the apple wedges aside after coating them in lemon juice.
    • Preheat the oven to 170 degrees Celsius/150 degrees Celsius fan/Gas 3. Butter and line a 23cm/9in a round cake tin with parchment paper.
    • Take a large bowl. Using an electric hand mixer, cream the butter and sugar till light and fluffy in a large mixing basin. Beat in the eggs until they are completely smooth. Sift together the flour, baking powder, and salt.
    • Slowly pour in the milk, mixing thoroughly after each addition, until the batter is smooth.
    • Pour the batter into the cake pan. Arrange the apple slices in a spiral design on the batter, flat-side down.

    • Combine the demerara sugar and cinnamon for the topping. Sprinkle the topping over the batter.
    • Bake for 40–45 minutes in the middle of the oven, or until a skewer inserted in the centre comes out clean and the top is golden brown.
    • Allow cooling in the tin for 15 minutes. Turn the cake out of the tin onto a wire rack by running a knife around the edges.
    • With whipped cream, serve warm or at room temperature.
