Description

Molokhia is named from a dark leafy green that has the same name. It's also known as Jew's mallow, and when cooked, it takes on an okra-like stickiness. It's an acquired taste for some.

  1. Step 1

    • Take off leaves of molokhia leaves, wash and drain
    • Freeze molokhia for 2 hours, it helps to blend it well
    • Take a vessel add the whole chicken, water bring to boil, remove any foam from the top
    • Then add onion, garlic, bay leaves, black pepper, Red pepper, coriander seeds, cardomon pods, salt, turmeric powder, black pepper, cinnamon, nutmeg, ground cloves, coriander, cumin to it
    • On a low flame cook the chicken for 45-60 minutes
    • After the chicken is cooked, sprinkle black pepper. Place chicken in the oven under  the top grill for golden colour 
    •  Take Mixer to add molokhia leaves put 3 scoops of chicken broth and blend for 1-2 minutes
    • Put the mixture in a vessel and cook on medium flame , bring molokhia to boil
    • Cook molokhia for 20-15 minutes
    • Mix garlic with olive oil and add in molokhia mixture
    • Ready to be served
    • Serve the molokhia with fresh lemon juice, rice, chicken
