First, preheat the oven to 350 degrees Fahrenheit.

Bring 2 quarts of water to a boil in a big saucepan. Cook for 15 minutes, or until macaroni is cooked.

Meanwhile, cook and stir the beef and onion in a Dutch oven over medium heat until the beef is no longer pink, about 8-10 minutes; drain.

Take a large mixing bowl and combine the tomatoes, green chiles, tomato sauce, and seasonings. Drain the macaroni and combine it with the beef mixture.

Mix the contents of the cheese packets, sour cream, and 1 cup cheese in a mixing bowl.

Top with the remaining cheese in a greased 13x9-inch baking dish. Cook for 20-25 minutes, uncovered, until bubbling.
